“I’m really excited about exploring traditional flavours from around the world and finding new ways to bring them to life,” says Rafael Bastidas, co-owner of Beach-based Latin American restaurant Inmigrante. He and his co-owner Sergio Calderon specialize in bold, beloved dishes like aguachile, arepas llaneras, quesabirrias, lomo saltado and ceviche peruano. “For me, it’s about respecting the traditions behind each dish and sharing that authenticity with Toronto,” Bastidas says.
