Azura chef Adam Ryan shares his favourite stops in Toronto’s food scene, including where he gets $1 tacos

Adam Ryan’s favourite thing about Toronto’s food scene? The fact that we can source so many wonderful ingredients, right here in our own backyard. “From spring to the end of summer, I take my cooks, my friends and whoever wants to come, to my favourite foraging spots in and outside of the city,” he says. “We responsibly harvest everything from ramps, fiddleheads and watercress, to wild ginger, mushrooms and berries. Everything finds its way onto my menu, and it gives me and our guests a connection to the place where we live and breathe.”

These treasures have been delighting diners at Azura, a newish Mediterranean restaurant on the Danforth where Ryan is both partner and executive chef. They wowed the Michelin inspectors recently as well; this past fall, the team received two nods: one recommendation and one exceptional cocktail award. “Azura is the culmination of Mediterranean flavours based on my experience as a chef growing up in the Canadian Shield: incredible spring bounties, passionate summers and uniquely Canadian falls and winters,” Ryan says. “We take what we’re given and turn it into a multi-course meal of flavours.”
