Vegetable proteins are insulated from the effects of climate change, Charlebois said, adding that prices are “incredibly stable.” For example, canned dry beans have only gone up a few cents (1.4 per cent) in Ontario since January 2025, compared to the more than $3 (53 per cent) jump for a kilogram of whole chicken over the same time period, according to Statistics Canada data.
